More info

It was produced by monks in the sixteenth century, and loved by Louis XIV’s court. It was called the “King of Cheeses” by the first gourmet, Jean-Anthelme Brillat-Savarin. Epoisses is a cheese whose rind is washed with Marc de Bourgogne. It has a strong aroma with woody notes. Visually, its crust is slightly wrinkled and shiny. The exterior of Epoisses can vary from orange ivory to brick red, depending on the how ripe the cheese is. The interior of Epoisses is light beige and its texture is creamy and unctuous. If it is young, the heart may be slightly crumbly. On the other hand, it is creamy if it is well matured.
